Stir-fried Chili Prawns

It’s Holy Week and you’re probably looking for a seafood recipe, here’s one!:)

When I started working as a Systems Integrator for GXS, we rented a place in Makati so we could walk to the office. While he works in the morning and I had to cater to US clients at night, I find it hard to sleep before noon so I stay awake and watch the local channels (we didn’t have cable then! haha). I would wait for Quickfire at 10 in the morning for Chef Rosebud’s 10-minute meals and this was one of her recipes that I cooked for him.:)

Stir-fried chili prawns was a hit with AJ and my brother-in-law! I did tweak the recipe, I didn’t use Ajinomoto (Quickfire is sponsored by them). Here’s what I used:

Prawns/shrimp, 400g egg noodles, 3 pcs bird’s eye chili and 3 pcs garlic (minced finely, I used a garlic press). I would buy fresh egg noodles from the market here in HK or the packed ones from Landmark/Cash and Carry. I also used dark soy sauce (Amoy), pure sesame oil and canola oil.

This could be stir fried in a wok or cooked in a pan. 🙂 If you’re cooking for more people, it would be easier to cook this in a wok.

I started heating my pan and poured in 1 Tbsp canola oil and 1 Tbsp sesame oil.

Next, I sauteed the garlic until fragrant…

then sauteed the chili until I smelled the spiciness.

I put in the shrimp, cooked one side first then flipped to cook the other side, about 1min 30secs per side over medium heat.

Once the shrimp was cooked, I put in the egg noodles and mixed everything.

After everything was mixed, I poured in 1 Tbsp dark soy sauce. I would mix it until the color is somewhat even, add 1 tsp of dark soy sauce if it lacked flavor.

Since my husband likes it spicier, I sprinkled dried Thai chili. I wouldn’t be able to eat what is on his plate! I already need water or milk for the noodles on mine. You can omit the chili if you want, or just have one or two.:) Enjoy!!

This amount of noodles and shrimp could feed 4 people or 2 very hungry people but my husband declares this as one of his most favorite dishes so he ends up eating 3 out of the 4 servings! Haha!

(Prep Time: 5 minutes | Cooking Time: 10 minutes)

Adapted from Quickfire

  • Prawn/Shrimp
  • 400g fresh egg noodles
  • 1 Tbsp Canola oil
  • 1 Tbsp Sesame oil
  • 1 Tbsp + 1 tsp Dark soy sauce (I used Amoy but I’ve used Marcapina)
  • 3 pcs bird’s eye chili (siling labuyo)
  • 2 pcs garlic, minced finely
  • Pinch of dried thai chili
  1. Heat pan then pour in the oil.
  2. Saute garlic until fragrant.
  3. Saute chili until its spiciness can be smelled.
  4. Cook one side of shrimp then flip to cook the other side.
  5. Mix noodles with shrimp, garlic and chili.
  6. Pour in soy sauce and mix everything together. Start with 1 Tbsp and if it lacks flavor, add 1 tsp.
  7. Serve and enjoy!:) Sprinkle more chili if you can handle the heat!

Makes 2-4 servings
