When my husband and I were living in the Philippines, we buy pancakes mixes — yes, that is…NOT the best way to do it! 😛 When I came to Hong Kong, pancake mixes were expensive! HK$30++ for a box? HELLO! I’d just eat at McDonald’s!
So I googled pancake recipes and I ended up with this copy cat recipe – IHOP Pancakes. It works everytime! I have had my share of failed pancakes and I’m so glad I found this one. I have not eaten at IHOP before so I would not know if they taste the same, my husband who has been to IHOP in the US could not remember! 😛
Ingredients: All purpose flour, granulated sugar, baking powder, baking soda, salt, egg, buttermilk and cooking oil.
All the ingredients are easy to find but buttermilk. I went to City Super and found buttermilk and the price was ridiculous so I googled homemade buttermilk. I would substitute that with a little over 1Tbsp of white distilled vinegar or lemon juice with about 1 1/4 cup of fresh milk. You have to have the vinegar/lemon juice in a measuring cup first then pour the milk until it reaches 1 1/4 cup. Stir and leave it for 5-10 minutes to curdle.
Mix the dry ingredients first then add the wet ingredients. Mix well. My husband loves tasting the batter! 🙂
In a pan, grease it up with cooking spray, butter or cooking oil if you would like but I love greasing it up with butter. Pour about 1/4 cup of the batter into the pan, leave it alone and it will spread naturally; we are not making crepe. When it starts to bubble up, wait for about 10 seconds and turn it. You can also check the bottom side to see if it has the right color before turning. Each batch takes less than 2 minutes. This makes about 6 big pancakes if you pour 1/4 cup in each. If you pour less, then you have more pancakes and take less time to cook each! 🙂
Serve with butter and maple syrup. We also tried to eat it with butter, maple syrup, whipped cream and peaches and it was AWESOME! 🙂

- 1 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 heaping teaspoon baking powder
- 1 teaspoon baking soda
- pinch of salt
- 1 egg
- 1/4 cup cooking oil (I use canola)
- 1 1/4 cup buttermilk (I make homemade buttermilk, recipe here)
- If making homemade buttermilk, make that first.
- In a bowl, mix dry ingredients in a bowl then add wet ingredients and mix well.
- Heat your pan and grease it up with butter, cooking oil/spray.
- Pour your batter into the pan, let it cook then turn when bottom side’s color is right and or top side shows bubbles.
- Serve with butter and maple syrup (and fruits, bacon, cream, etc!).
Makes 2-4 servings
Sometimes, I like to cut recipe in half — just half of everything…except the egg (I still put 1 egg). You can try that too if you are just cooking for yourself and one other person. 🙂 I love pancakes but just like shrimp, I can only have up to 3 medium-sized ones!
